Healthy Banana Cake

After that episode of artery clogging cake, i decided to compensate my body with a nutritous banana cake : DD




I substitued some of the plain flour to organic wholemeal flour and cake flour to lighten the cake. Otherwise it would be quite dense and less cake-like. Oh and walnuts!! Walnuts are high in linolenic acid ( Omega 3 ) thats provides EPA and DHA thats really good for brain development ;D







Make this cake now !! you'll need a 21 x 8 cm loaf pan


Ingredients

180g Really Ripe Banana, mashed

1 Egg

45g Canola Oil

60g Plain Unsweetened Yogurt ( Sour Cream will taste even better ! )

40g Sugar

15g Wholemeal Flour

10g Cake Flour

5g Wheat Bran

95g Plain Flour ( Use 125g plain flour if you don't posess the flour)

1 Tsp Baking Powder

1/4 Tsp Salt

1/4 Tsp Baking Soda

20g Walnuts, chopped

Directions

1. Sieve all dry ingredients together with sugar

2. Whisk egg, gradually add in oil followed by yogurt

3. Make a well in the centre, pour in wet mixture and stir to just combined.

4. Fold in mashed banana followed by walnuts.

5. Bake at 180 degree celsius for 25- 30 minutes
